Exclusive Health Club Café Food & Beverage Manager

£25K-£28K + bonus per annum

OBJECTIVE AND PRINCIPLE KEY JOB FUNCTION

To manage effectively, the Food & Beverage operation within the Chelsea Health Club & Spa, ensuring that a consistently high level of service and product is offered to every client.

To be responsible for all aspects of the business, including financial accountability, staffing, service delivery and product development.

Maintain a close working relationship with the Deputy General Manager and Operations Manager of the Chelsea Health Club & Spa.

DUTIES AND RESPONSIBILITIES

  • To act as an ambassador for Levy UK at Chelsea Football Club at all times.
  • Maintain a consistently high level of service, as set out in the SOP
  • To maximise all opportunities to up sell
  • To induct, train, develop and maintain a full team of rota team members to ensure that the highest levels of efficiency within the operation and customer service are employed at all times.
  • To manage and motivate your team of staff, setting and reviewing key objectives.
  • To monitor and enforce staff working hours and punctuality.
  • To work closely with all colleagues to develop and promote team spirit and to achieve standards of work
  • To attend weekly manager’s meetings with the Health Club Team.
  • To engender good staff relations at all times.
  • To ensure that all systems and procedures in the Levy UK Health and Safety and Food Safety manuals are maintained at all times.
  • To create, develop and implement new ideas, processes and standards that will positively enhance the Catering Operation with in the Health Club.
  • To liaise with relevant departments to ensure standards of service and event delivery are maintained at the highest level.
  • To be flexible in supporting the Levy UK team at Chelsea FC.

FINANCIAL RESPONSIBILITY

  • Continuously drive sales to ensure that weekly and monthly revenue targets are achieved.
  • Support the kitchen team in managing the COS for food products.
  • To ensure all systems and procedures are in place to control beverage stock and achieve targeted COS.
  • To ensure that labour costs are managed in line with budget
  • To suggest to your Line Manager developments in the operation that may improve the profitability and implement and monitor these changes once approved.
  • To ensure that all cash and stock on site is kept safe at all times.
  • To effectively operate and manage all EPOS equipment.
  • To ensure that Health Club cash handling procedures are followed at all times, reporting any problems to your Line Manager immediately that they come to light.
  • To ensure that all financial administration is completed in a timely manner.
  • To ensure that all new Levy UK company policies are implemented at all times.
  • To support the Finance Department in controlling debt and eliminating ‘walk-outs’

MISCELLANEOUS RESPONSIBILITIES

  • To organise own time off in conjunction with the Health Club Deputy General Manager and Deputy Head of Hospitality (Levy UK)
  • To ensure that lieu days are taken within the period set by the company.
  • To ensure that holidays are taken subject to the needs of the business and not carried forward.
  • To report, and where possible take action, for any incidences of fire, damage, loss, maintenance or other occurrences.
  • To refer all Human Resource and payroll issues directly to the Deputy Head of Hospitality.

ESSENTIAL REQUIREMENTS

  • Previous managerial or supervisory experience with in catering industry  
  • Results focus and initiative with, the drive and determination to get things done.
