General Manager - Flutes & Tails - Edinburgh Airport

Reports to: Area Manage

Responsible for: Kitchen manager/Head Chef/Deputy Manager/Assistant Manager/Team

Key Responsibilities

• Accountable for the successful operation of their restaurant (this includes ensuring the restaurant is being effectively covered during periods of short term planned absence)
• Manage all aspects of the business, maximising profitability whilst ensuring all Company standards, policies and procedures are maintained
• Ensure delivery of labour, stock and overhead costs in line with budget
• Maximise profit through driving sales and controlling margins
• Ensure the business complies with all legislation including Hygiene and Safety and Licensing Laws
• Be accountable for management of cash, stock and security
• Ensure the restaurant team are trained and resourced to consistently deliver genuine hospitality and quality food and drink
• Ensure all team are trained to minimum legal requirements as detailed in the Company Training policy and that the appropriate records are kept

• Ensures self, team and the restaurant maintain the highest level of appearance

• Creates an in house ‘guest at heart’ culture within the team
• Coaches the team to deliver excellent guest hospitality measures
• Ensures the brand standards are followed without exception

• Promotes the delivery of food and drink to the highest quality
• Follows recruitment procedures to select team members with a guest at heart mind-set
• Keeps up with guest metrics performance
• Actively develops new ways to improve hospitality in line with brand standards but relevant to their local market

to maintain or improve results

• Able to identify and grow potential talent and has robust succession plans in place
