Job Specific Duties & Responsibilities 
 
As a Passador you will prepare, cook and serve meats in accordance with set procedures that safeguard the health and safety, food hygiene and quality standards (quality of the meats and how they are presented and served) in order to maintain a safe, clean and tidy environment and ultimately generate high levels of guest satisfaction and exceed their expectations. You will be responsible for looking after guests in the restaurant, ensuring they receive the best service possible and maintaining the grill area, ensuring it is kept clean, tidy and in good working condition at all times. You will have a sound awareness of Health and Safety and Food Hygiene rules and regulations and work in a manner which complies with them at all times. You will be responsible for upholding the highest standards in terms of food quality, customer service and the reputation of our restaurant. You will be expected to work in a professional manner, being flexible, dynamic, proactive and enthusiastic and will have sound communication skills to ensure customers receive outstanding service, always with a smile.  
 
You will be expected to: 

  • Maintain high levels of personal hygiene and immaculate presentation 
  • Work well within the team, communicating effectively with all necessary team members to ensure customers receive the highest level of products and service within good time and to ensure all preparation, closing down and other associated tasks are completed effectively and efficiently 
  • Receive instructions courteously, showing respect to your superiors and fellow colleagues 
  • Respond to the dynamics of the service environment, being proactive at quiet times whilst anticipating and meeting the needs of the fast paced restaurant environment 
  • Coach and support junior staff to help them improve their product knowledge and develop their skills and confidence 
  • Prepare the correct amount of each of the different types of meats in advance of service, using the correct garnishes/marinades etc. as specified in the meat specifications sheets and using the correct methods and procedures (full training will be provided) 
  • Work in an efficient manner to reduce time and product wastage 
  • Cook meats in the grill following correct procedures 
  • Present and serve the meats to the customers at their tables, approaching the tables carefully and politely offering each type of meat, explaining which one it is and offering additional information about the meats where you believe the customers would welcome such information and recommendations as interesting or helpful 
  • Ensure that meats are always held, stored, cooked, cooled and served at the correct temperatures to ensure optimal food safety
  • Ensure the grill area is kept clean and tidy using the ‘clean as you go’ approach
  • Provide feedback and ideas to the grill chef if you think anything could be improved or if you are aware of something that you believe he should know
  • Plan to make sure that each of your tables receive a good range and selection of meats, making sure that you pick up on how they like the meats cooked, any preferences towards meats they do or don’t like so that you can, to the best of your ability, tailor your service to meet and exceed their expectations
  • Assist in the kitchen when requested to
  • Comply with standards of preparation and cooking techniques and methods of serving food items
  • Comply with the staff Handbook
  • Provide a courteous and efficient service to all guests, not forgetting to smile and offering assistance/advice wherever it might be welcomed
  • Communicate well with floor staff, including management, to ensure guests receive everything that they want, not just the meats that you are serving (e.g. if guests try to order drinks with you, pass the order on to the relevant waiter)
  • Communicate well with management should you anticipate or become aware of a complaint in order for the situation to be resolved quickly and effectively
  • Ensure knives, tongs and other meat service equipment are kept clean and that appropriate equipment is chosen to serve each of the different meats with
  • Communicate with managers and waiting staff with regards to special requests and preparation times of specific meats that have been ordered, always in a patient and courteous manner
  • Assist with the counting and ordering of stock when requested to and always maintain good stock rotation to avoid wastage
  • Receive deliveries, checking supplied meats arrive in the right condition and that they match the order placed (check of the delivery note against what has actually arrived and against the order sheet) and that if anything arrives that is not in good condition or was not ordered is sent back and a record has been made of the discrepancy
  • Be willing to cross-train, developing skills that enable you to work in other departments when necessary and being prepared to assist in other departments when required  
  • Pay attention to detail at all times 
  • Comply with our staff Handbook policies 
  • Ensure all cleaning down and closing down procedures are completed to a high standard at the end of every evening
